Lentils can be a nice surprise for company and are healthy.
Ingredients:

Lentils
|
1 cup
|
|
Large Shallots
|
2
|
May subsitute 1 medium onion
|
Extra Virgin Olive Oil
|
1 tablespoon
|
|
Chicken Stock
|
1 cup
|
May subsitute Beef Broth
|
|
- Rinse and drain lentils.
- Chop shallots or onion.
- Sauté shallots or onion on medium/low heat for 2 or 3 minutes until translucent.
- Stir in lentils increasing heat to medium/high.
- Add Chicken Stock or Beef Broth.
- Bring to boil. Reduce heat and simmer covered for 20 minutes.
