Lentils
Lentils can be a nice surprise for company and are healthy.
Ingredients:

Lentils
1 cup
 
Large Shallots
2
May subsitute 1 medium onion
Extra Virgin Olive Oil        
1 tablespoon
 
Chicken Stock
1 cup
May subsitute Beef Broth
  1. Rinse and drain lentils.  
  2. Chop shallots or onion.
  3. Sauté shallots or onion on medium/low heat for 2 or 3 minutes until translucent.
  4. Stir in lentils increasing heat to medium/high.
  5. Add Chicken Stock or Beef Broth.
  6. Bring to boil.  Reduce heat and simmer covered for 20 minutes.
