1. Beat together egg and milk (or water) and add cheese.

2. Sauté onions and bell pepper in olive oil over medium heat until the onions are translucent.
Add beaten egg, milk and cheese mixture.

3. Slowly cook frittata over medium low heat until edges can be lifted with a heat resistant spatula. Finish under broiler about 4 – 5 minutes until golden brown.
